One Pot Porcupine Meatballs

This One-Pot Porcupine Meatball recipe is a serious crowd-pleaser. Satisfying, hearty, and so easy - you just throw it all in a pot!

Jess’s mum used to feed 8 kids on a tight budget with this recipe. There were lots of hungry mouths to feed, but she always ensured they ate well (guess we know where Jess gets her love of simple, homemade cooking).

Opting for mince is a great way to save money while getting meat into your diet. We got ours from the awesome boys at @boococksqualitymeats next door.

Serves 4 (very generously!) Expect leftovers.

RECIPE

1 onion
Handful fresh herbs (whatever you have on hand - we used parsley)
600g mince
2/3 cup of rice
500g jar of pasta sauce (we used Aurelio Basilico)
500g water
1 tsp chicken stock
Olive oil

PREPARATION

1. Simply mix it all together and roll into balls.
2. In a large oven-safe pot, add oil, pasta sauce, and water. When pot is boiling, add meatballs.
4. Pop the pot into the oven at 160 degrees for 20 mins. The rice will cook and you’ll notice the meatballs expand.

Serve with greens and grated parmesan.
