From Store to Plate: Inside the Greensmith Kitchen

When we opened the Greensmith Kitchen café, we did not start with a menu. We started with the store. What we stock, what comes through the doors each week, and what we already trust enough to put on our own tables.

We have been wanting to expand our Greensmith Brand for a while now and this became the best opportunity for us. We only cook using ingredients and products straight from our shelves, further showcasing the confidence we have in our own products. Every morning we freshly bake and prepare a variety of foods that are all packed with fresh, organic produce. We have been working closely with our local providers to give us the freshest seasonal goods they can, giving us a menu that is forever changing.

A big part of how we operate comes down to reducing waste. Much of our salad prep begins with imperfect vegetables and fruits from the store. Produce that is still fresh and full of flavour but might not be chosen first for display is prepped, roasted, peeled, to create anything from a salad to a cake. This allows us to reduce waste while keeping the food honest and practical. This approach helps us to keep costs down, which  is why our cafe menu is so competitively priced whilst still providing our customers with organic wholefoods.

All of our most popular salads come from our in store produce. Bean and broccoli salad with macadamia and salted dates is a daily sellout. Roast vegetable salad with kale and feta changes slightly depending on what is coming in, but the satisfaction levels stay the same. These salads are made daily, adjusted as needed, and are packed with goodness.

The same thinking carries through the rest of the menu. We are creative with our daily display cabinet items. Everything is fresh, everything is delicious and everything is nutritious. 

From Breakfast to Baking, How the Menu Comes Together

Our breakfast and lunch menu is centered around bread, eggs, dairy, and proteins that keep you full and nourished. Our bread is supplied by Jeremiah’s Crust and Noosa Sourdough, both of which work perfectly with our toasties, open sandwiches and baked dishes.

Beach Farm Noosa ham and bacon are used throughout our menu, including the ‘Big Bacon Egg Cheese Panini’ and the ‘Zucchini Sourdough Frittata’. These products support Beach Farm Noosa who are local. They are certified organic and only deliver us the highest quality items, which crisp to perfection when grilled and baked.

Our eggs come from Tin Shed Farm and are used across breakfast items, savoury baking and all of our cakes. Their chickens are free roaming and packed with flavour, making them an excellent addition to most of our kitchen range.

Our kitchen’s cheese selection comes from Kenilworth Dairy. We use their mature cheddar as our signature cheese in all of our toasties. Schultz dairy quark is biodynamic and organic and used in our secret icing recipe.

Staff favourite Careme Pastry is used across our baked items. Their puff pastry is known for its consistent results and clean ingredients. Made with real butter, it works perfectly with sweet and savoury baking, making it an all round pastry.

Build your own protein bowls

One of the most popular lunch options is to build your own protein bowl. Customers get to choose their salad and select a protein. The bowl is then finished with Gaga’s Power Kraut and Woodford Microgreens or Greens and Blooms sunflower sprouts. This gives our customers the flexibility while keeping the chefs touch.

Using Gaga’s kraut as a standard topping means every bowl includes a probiotic fermented element without an extra dressing. This adds flavour to our salads and gives them a fermented kick.

Fresh Baking Daily

All of our cakes and baked goods are made fresh daily because they sell out! We focus on classics done well, rather than a long shelf life.

We have perfected our banana bread recipe using Yomo banana bread mix and our chocolate muffins and cakes are made using their chocolate muffin mix. These mixes keep our early morning prep simple but effective. Our baked sweets are topped with in house organic fruit, nuts and spices depending on availability. We use Nodo carrot cake mix for our carrot cake, which remains the top seller every day. 

Our range of cakes include a mango coconut cake, peach almond cake, blackberry banana bread and seasonal fruit slices depending on what produce is available. Our nutritious slices are made with whole foods and quality ingredients, letting you enjoy a treat without the guilty conscience.

Cooking With What We Stock

All of the ingredients that we use in our kitchen come directly from our store or suppliers. We do this so that our customers can have the accessibility to recreate anything they loved from our cafe from the comfort of their own home. We also know and trust the products that we sell and are confident that they are the best value we can give you. 

We created Greensmith Kitchen as a way to show everyone that good food starts with good ingredients. Our Cafe is an extension of our physical store but also a space where we can bring our ideas to life. We update the menu seasonally, meaning every time you come to the cafe you can be trying something new. We are proud of our very minimal waste, which comes from the expert planning sourcing and preparation done by our chef.
