We love simple food. Enjoy this honey-glazed carrot recipe with feta, macadamias, parsley and rosemary from Jess’s garden!
Ingredients:
1 lb (450g) carrots, peeled and cut into sticks
2 tbsp olive oil
2 tbsp honey
1 tsp fresh rosemary, finely chopped (or 1/2 tsp dried rosemary)
Salt and black pepper to taste
1/4 cup feta cheese, crumbled
1/4 cup macadamias, roughly chopped
2 tbsp fresh parsley, chopped
Instructions:
Preheat your oven to 200°C.
Place the peeled and cut carrots on a baking sheet. Drizzle the olive oil and honey and sprinkle with chopped rosemary, salt, and black pepper. Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelised, turning them halfway through for even roasting.
While the carrots are roasting, toast the macadamias in a dry skillet over medium heat for 3-5 minutes, stirring frequently until they are golden brown. Remove from heat and set aside.
Transfer everything to a serving platter. Sprinkle the crumbled feta and toasted macadamias over the top. Finish with a sprinkle of fresh chopped parsley for a burst of colour and flavour.
Serve immediately and enjoy this simple, yet flavourful dish!
