
Macaroni Bolognaise – A Family Favourite
This Macaroni Bolognaise is a hearty, classic recipe that’s perfect for families or anyone craving a comforting meal. With rich flavours and wholesome ingredients, it’s a dish that’s sure to become a regular in your meal rotation. Easily swap out the macaroni for your favourite pasta shape, and enjoy the versatility of this delicious recipe.
Ingredients:
- 500g Kandanga 100% grass-fed beef mince
- 1 organic onion, finely chopped
- 2 cloves of organic garlic, minced
- Fresh basil and oregano from the garden
- 2 organic carrots, finely diced
- 1 cup organic brown cup mushrooms, sliced
- 1 Love My Earth bay leaf
- 2 tbsp Ceres Organic tomato paste
- 1 tin (400g) Ceres Organic chopped tomatoes with basil
- 1 jar (350g) Organic Le Conserve della Nonna tomato sauce with basil
- 250ml filtered water (add as needed)
- 300g Watersteps Macaroni
- Organic olive oil for cooking
- Love My Earth Celtic salt and peppercorns, to taste
Optional Toppings:
- Pecorino Romano or Grana Padano
- Mozzarella cheese
- Fresh basil leaves
Method:
- Heat a generous splash of organic olive oil in a large saucepan. Add the onion and garlic with a pinch of Love My Earth Celtic salt and freshly cracked pepper. Sauté until fragrant and softened.
- Add the grass-fed beef mince and cook until browned. Stir in the tomato paste and cook for a few minutes to deepen the flavour.
- Add the tinned tomatoes, Le Conserve della Nonna tomato sauce, diced carrots, mushrooms, fresh herbs, and the bay leaf. Stir well to combine.
- Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer. As the liquid reduces, add 250ml of filtered water in stages, allowing it to reduce and build depth of flavour. Repeat this process multiple times, tasting and adjusting the seasoning with salt and pepper as needed.
- While the bolognaise simmers, bring a pot of water to a boil. Add a splash of olive oil and cook the Watersteps Macaroni according to the packet instructions. Strain and set aside.
- Combine the cooked macaroni with the bolognaise sauce. Serve immediately with a sprinkle of parmesan, mozzarella, and fresh basil.
Variation: For a baked version, transfer the macaroni and bolognaise mixture to a baking dish. Top with mozzarella and parmesan cheese, then bake in the oven until the cheese is golden and bubbling.
