
Potato Salad

It combines perfectly cooked organic potatoes with rich homemade boiled egg mayonnaise, Gamze Bacon, and the vibrant flavours of fresh dill and parsley. This potato salad is perfect for your Christmas lunch table, weekend barbecues with friends, or even a quick midweek meal when paired with grilled meats or veggies. It’s versatile, nourishing, and guaranteed to impress.
Ingredients:
600g potatoes, washed & unpeeled
2 nitrate free ( we used Gamze ) bacon rashers, rind removed, chopped
3 green shallot, thinly sliced or red onion
Bunch of Dill chopped finely
1/2 cup of boiled egg Mayo – See recepie below
Boil Potatoes cut into pieces add to serving bowl
Directions:
Fry Bacon Pieces add to potatoes
Chop onions and dill and add to potatoes (keep some dill for garnish)
Pour over Egg mayo and mix through potatoes
Garnish with Dill
Boiled Egg Mayo:
Protein rich delicious egg mayonnaise
3 organic boiled eggs
125ml (1/2 cup) olive oil
1 1/2 tbsp fresh lemon juice
1 tbsp Dijon mustard
1 garlic clove
Place the boiled eggs in a high-powered blender. Add the oil, lemon juice and mustard. Season, then blend, scraping down the side occasionally until smooth. Keep blending until it is as smooth as mayonnaise.
*Add more oil or cream if you want it to be runnier.
