Ingredients
1.5kg pork collar from @boococksqualitymeats
2 apples sliced
1/2 bunch of sage
1 cup stock (we used @nutraorganics)
Olive oil
3 garlic cloves roughly chopped
Drizzle of honey
Few splashes of apple cider vinegar (we use @spiralfoods)
Good salt
To Make
Preheat oven to 140C.
Place pork in lined tray and cut approx 5 deep grooves into the pork and stuff with apple slices, sage leaves and garlic. Add remaining apple to the bottom of the tray.
Drizzle pork with honey, ACV, and a little salt.
Pour stock into the tray and pop under the grill and remove when the top has browned.
Cover pork in foil and place back in the over for 4-5 hours (or in the slow cooker on low & slow).
You will know pork is ready when it easily falls apart.
