Rum Balls

Inspired by Shan from My Food Religion, I gave these Rum Balls a go, and let me tell you they’re balls of festive bliss!

I used Cacao Powder, Almond Meal, Desiccated Coconut, and cinnamon from the Love My Earth range.. added to medjool dates, cashew butter, vanilla extract, and a splash of rum to keep them crap-free and absolutely delicious.

Ingredients:

12 Medjool dates, pitted

1 cup LME desiccated coconut

1/2 cup LME almond meal

1/2 cup cashew butter

1/4 cup LME Cacao Powder

1/8-1/4 cup Rum

1 tsp Cinnamon

1 tsp Vanilla extract or bean powder

Extra coconut for rolling.

Directions:

In a food processor, add the dates and blend until a paste consistency forms.

Add all remaining ingredients (except extra coconut) and blend until combined.

Roll into balls and roll in the coconut.

Pop in the fridge for a couple of hours to set (can be stored in fridge or freezer)
