Summer Stone fruit Salad

The perfect summer salad full of peaches, cherries, tomatoes, parsley and feta!

Celebrate the vibrant flavours of summer with a stone fruit salad that’s as colourful as it is delicious! Juicy organic nectarines, peaches and cherries mingle with sun-kissed tomatoes, creamy feta, and peppery rocket for a refreshing dish perfect for the season. Brighten up your lunch or dinner table with this easy, breezy salad that tastes like summer sunshine in every bite.

INGREDIENTS

2 organic yellow nectarines
2 organic apricots or peaches
10 cherries
1/2 cup cooked Quinoa
1/2 block French feta
handful cherry tomatoes
3 tablespoons of appple cider dressing
3 tablespoons of maple syrup
1/4 cup extra virgin olive oil
2 handfuls of Organic Rocket
handful flat leaf parsley or basil leaves or both
handful of activated pepta
Ollsons Sea Salt
Freshly ground black pepper

INSTRUCTIONS

Remove pips from stone fruit and slice into thin slices. Pit cherries and slice in half. Slice tomatoes in half.
Place several handfuls of rocket in a large salad bowl. Spread over the quinoa. Top with nectarines, peaches, cherries and tomatoes.


Crumble feta with your hands over the salad. Tear parsley & basil leaves over. Sprinkle with pepitas.
To make the dressing, whisk the apple cider, maple syrup and olive oil together & add salt and pepper to taste. Dress salad & enjoy!
