Blueberry & Chia Jam

Ingredients:

  • 250g Organic Wild Blueberries
  • 250g Strawberries
  • Juice 1 Lemon
  • 1/3 Cup Organic Chia Seeds
  • 1/3 Cup Honey or maple (more if you like sweet)

Directions:

In a heavy bottom saucepan combine strawberries, blueberries and honey. Bring to a simmer over medium heat. Stir in chia seeds. Reduce heat to a medium-low and simmer uncovered, stirring occasionally for 10-15 mins or until the berries soften and breakdown. It’s normal for the foam to form on the top of the jam as it cooks. Remove saucepan from heat and stir in lemon juice. Jam will be pretty runny but it will thicken as it cools and even more when refrigerated. Let jam cool completely at room temperature and then ladle into clean jars. Store covered, for up to 2 weeks in the refrigerator. Recipe makes 2 1/2 cups. Serve with pancakes, muesli, on toast, over ice cream.

To make into Gummies:

To turn into gummies – combine 3 Tbs of gelatin and 1/2 cup of water, mix on low heat until the gelatin has dissolved. Remove from the heat. Combine with the berry chia jam and pour into molds. Adding the gelatin to make into gummies. Refrigerate.
