Ingredients:

1 Cucumber

1 Red Onion

1 Punnet Cherry Tomatoes

Bunch of Parsley

Bunch of Chives

Sourdough Croutons (1 slice of bread worth)

2 Small Roasted Sweet Potato cubed

1/2 block Greek Feta

Rocket

Dressing:

Garlic

Zest Lemon

1 TBS Dijon Mustard

Splash Apple Cider Vinegar

Splash Olive Oil

Microgreens to garnish

Directions:

Dressing:

Grate garlic and zest lemon into a bowl, add mustard and whisk your base. Gently whisk in your apple cider vinegar and olive oil (add fresh oregano if you like)

Salad:

Chop cucumber, red onion, tomatoes, parsley and chives – put into bowl

Add rocket, sweet potato, croutons and a little feta to the bowl

Mix salad with dressing, plate add more feta & croutons as desired.

Top with microgreens and a drizzle of olive oil and enjoy!
